RECIPE: Wheyhey's peanut butter cookies

THE founders of Wheyhey - the all natural protein ice cream - previously picked out their top tips to help you stay fit all-year round.

Now, they've provided some delicious and healthy recipes to help you along your journey.

Ingredients:

1 x 280g jar of natural peanut butter
2 eggs
3 tbs stevia (or more depending on taste)
1 tbs of vanilla essence
Any flavour Wheyhey ice-cream

Method:

1. Preheat oven to 175°C.

2. Mix all of the ingredients together in a bowl, it might look runny but if you keep mixing you will get a cookie dough consistency.

3. Get some cookie dough into your hands and roll into a ball. Repeat this until all dough is rolled up.

4. Place the rolled balls on parchment paper or on a non-stick cookie pan.

5. With a fork press down slightly on the cookie ball horizontally and vertically to create a flatter shape.

6. Place in the oven for 12-14 minutes depending on size.

7. When they have finished cooking take them out and let them cool on a wire rack.

8. Get a spoonful of Wheyhey ice-cream and place it on a cookie, and sandwich it with another cookie on top.

Note: You can also package them in some cling film and store in a freezer if you want them at a later stage.
